Get involved

So what do I need from you – friends, colleagues, contacts I’ve sent this link to…

First is support. This is not going to be easy and having read the traumas of it from many more experienced runners than me I’m well aware of the gigantuan task ahead. So keeping my confidence up – both to May 30th 2012 and then beyond is important. I need a crew – and whilst I’m looking for people in the States I’d also like familiar faces to visit so if you’re thinking of a break in the US next summer let me know! Plus if I know you live in the US and aren’t too far from the route… I’ll be in touch shortly!

Second having run now for a while I’ve never done a sponsored run, this should probably be the one for charity. So I’m currently whittling down the list of my favorite charities and will put up a sponsorship link here soon.

  2. Never Fail Pie Crust

    3 cups flour
    3/4 teaspoon salt
    1 cup shortening (i use crisco)
    1 egg well beaten
    5 Tablespoons water
    1 Tablespoon vinegar

    Mix together flour and salt. Cut in shortening and mix until small crumbs form.
    Add egg, water and vinegar. Mix all together. Form a ball and divide into 4 parts.
    Roll out (makes 4 crusts, enough for two top and bottom crust pies)

    Peach/Blueberry Pie

    5 cups of fruit ( I used 4 cups fresh sliced peaches and 1 cup of blueberries)
    3/4 cup sugar
    1/3 cup flour
    1/2-1 teaspoon cinnamon
    1 Tablespoon lemon juice
    Preheat oven to 400 degrees. Combine fruit, sugar, flour, cinnamon and lemon juice.
    Mix all together. Put in pie crust. Dot with butter. Top with top pie crust; seal and flute edge.
    Be for 15 minutes at 400 degrees. Turn oven down to 350 degrees and continue baking until
    juice is bubbly in center. About 30-45 minutes. Cool. Enjoy.
